Vegan Fig Upside-Down Skillet Cake

This cake is an upside-down cake made with figs in a cast-iron skillet, and it’s vegan. Caramelized figs, chewy edges, and a moist crumb make this cake a hit with vegans and non-vegans alike.
Ingredients
12.3 oz (~350 g – about a pint box’s volume) figs, stemmed
3/4 cup (150 g) granulated sugar
1 TBSP (15 mL) apple cider vinegar
1 cup minus 1 TBSP soy milk (225 mL)
1/3 cup (80 mL) olive oil
1 tsp (5 mL) vanilla
1 cup (200g) light brown sugar
2 cups (250 g) all-purpose flour
1 tsp (6 g) salt
1 tsp (3.5 g) baking powder
1 tsp (4.5 g) baking soda
3 TBSP (1.5 oz./43 g) Earth Balance or vegan butter substitute
