An Asian inspired dish using quinoa instead of rice. It’s filling, delicious, Vegan, and Gluten-free!
Ingredients
2½ cups cooked quinoa (equivalent to approximately 1 cup uncooked + 2 cups water)
1 cup raw broccoli florets
1 cup mushrooms, sliced
1 cup cherry tomatoes
1 red bell pepper, sliced
1 cup raw sugar snap peas
¼ cup oil of your choice (I used olive oil)
¼ cup soy sauce
pepper to taste
