AUNT JESSIE’S FESTIVE CARROT CAKE
Aunt Jessie’s Festive Carrot Cake, visually stunning with its beautifully designed sugar crystals and equally delicious with its spiced flavor and diverse texture.
2 cups demerara sugar (or light brown sugar)
1 1/2 cups sunflower oil (or any vegetable oil)
3 cups freshly grated carrots
1 cup chopped nuts (we used almonds and walnuts)
4 organic, free-range eggs
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1/2 tsp Allspice
1/4 tsp cardamom
1/4 tsp ground ginger
1/2 tsp nutmeg
1 cup shredded coconut, unsweetened
2 1/2 cups organic, unbleached all-purpose flour
Frosting:
1-8 oz package cream cheese
1/2 cup butter
2 tsp Maple syrup
1/2 cup icing sugar
Sugar Crystals
1/2 cup granulated sugar, melted slowly
