Beer-Marinated Cherry Tomatoes
These easy beer-marinated tomatoes are great on toast, with pasta, green salads and on cheese and hummus platters.
Ingredients
1/2 cup extra-virgin olive oil
1/4 cup minced shallot
2 garlic cloves, peeled and minced
2 pints cherry tomatoes (some halved, some whole)
1/4 cup beer
2 tablespoons red wine vinegar
1/2 tsp. salt
1/4 cup fresh basil, minced
1/4 cup fresh parsley, minced
