BRUSSELS SPROUT POTATO BAKED MASH

Prep time: 15 minutes
Cook time: 40 minutes
Total time: 55 minutes
Serves: 4

Brussels Sprout Potato Baked Mash, whether made with some of those festive leftovers or made fresh, the combination of soft cooked veggies and the sweetness and pungent nature of the caramelized onions and roasted garlic, makes for a wonderful side dish or even a main vegetarian plate!

Ingredients

3 cups cleaned Brussel sprouts
4 Yukon gold potatoes
1/2 yellow onion
4 cloves garlic
2 tbsp butter
1 tbsp olive oil
1 tbsp water
1/4 cup milk
1/2 cup grated Parmigiano Reggiano
Sea salt and pepper
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/4 cup Italian style bread crumbs
