This is a delicious side dish to make for your next holiday gathering. Combine roasted veggies, wild rice, dried cranberries, feta, and fresh parsley and toss it in a homemade balsamic vinaigrette.
Ingredients
1 lb of Brussels sprouts, cut in half
2 parsnips, diced
2 cups butternut squash chopped into 1’ cubes
1 tbs olive oil
1 tsp salt
1 tsp pepper
2 cups cooked wild rice
½ cup dried cranberries
1/3 cup crumbled feta cheese
¼ cup chopped fresh parsley
Dressing:
¼ cup balsamic vinegar
1/2 clove garlic, finely chopped
1 tsp Dijon mustard
1 tsp olive oil
1 tsp maple syrup, agave nectar, or honey
Dash salt and pepper
