Cauliflower Frittata with Ricotta

Creamy, fluffy eggs with golden cauliflower, sauteed spinach, and dollops of rich ricotta in this delicious frittata.

Ingredients

1 T butter
2 T olive oil
1 shallot, chopped
½ a head of cauliflower cut in small florets
salt + pepper to taste
6 eggs
2 T half and half
⅓ C milk
1 C spinach
⅓ C ricotta
½ tsp herbs de provence
salt + pepper to taste
