Mujaddara
Mujaddara is Middle Eastern comfort food at its finest. It’s an incredibly flavorful vegetarian dish made with lentils and rice. To make it vegan, you can double the amount of olive oil and omit the butter and spiced mint yogurt!
1 tablespoon unsalted butter
1 tablespoon olive oil
2 yellow onions, thinly sliced
2 cups vegetable broth
1/2 cup lentils
1/2 brown basmati rice
1/2 cup dried apricots, chopped
1/4 slivered almonds (or roughly chopped whole almonds)
FOR THE SPICED MINT YOGURT:
1/3 cup Greek yogurt
1 tablespoon fresh mint, minced
1 tablespoon olive oil
2 teaspoon lemon juice
1 teaspoon honey
1/4 teaspoon ground cinnamon
pinch of salt
pinch of paprika
