Mushroom and Spinach Omelet with Goat Cheese

Quick and easy omelet with spinach, mushrooms and goat cheese. Great way to start the day!

Ingredients
  • 3 tablespoons extra virgin olive oil
  • 1 cup mushrooms, roughly chopped
  • 1 cup baby spinach
  • 1 tablespoon butter
  • 3 eggs
  • 2 tablespoons crumbled goat cheese
  • 1/2 ripe avocado, diced
  • Chopped fresh parsley, for garnish
