No-bake strawberry tartlets
These super cute no-bake strawberry tartlets are perfect when you want a quick and easy dessert, but do not feel like turning your oven on. The crust is made with ground biscuits and coconut oil, just like a cheesecake base, and it is then topped with vegan custard and sliced strawberries. It’s my favourite dessert and I hope it will be yours too!
200 g biscuits that you would use for a cheesecake base (speculoos, crackers, sugar cookies, … Choose vegan/GF if needed)
3 tsp coconut oil
strawberries
For the Custard :
6 tbsp light cane sugar
2 tsp cornstarch
8 tsp flour (or more cornstarch for GF)
2 tbsp cashew butter
2 tbsp water
330 ml plant milk (use rice, soy or almond)
