Pumpkin Granola Muffins
Hearty and chewy snack packed with seeds, dried cranberries and your favorite fall spices. And at only 93 calories a piece!
3/4 cup (100g) sunflower seeds
1/3 cup (45g) pumpkin seeds
1/4 (40g) cup chia seeds
3/4 cup (90g) dried cranberries, chopped (preferably use cranberries sweetened with concentrated apple juice to avoid the added sugar)
2 cups (160g) rolled oats (use certified gluten-free if necessary)
2 teaspoons pumpkin spice
1 teaspoon additional cinnamon (optional, for cinnamon lovers such as myself)
dash of salt
1 cup (250g) pumpkin puree
3/4 cup (170g) mashed ripe banana (about 3 large bananas)
2 teaspoons pure vanilla extract
1/4 cup agave or other liquid sweetener (xylitol or brown sugar would also work, you might only need to add a bit more liquid)
optional: more sweetener to taste (I added a bit of stevia)
