soba noodles or any other quick cooking asian noodles
roughly chopped portabella mushrooms
snap peas, stems/strings removed and cut in half (see tips above)
stalks asparagus, cut into bite sized pieces
sesame oil, divided
rice vinegar or white wine vinegar
small clove garlic, finely chopped
finely chopped chives or scallions, to top
toasted sesame seeds, to top
