Smoky Tomato Shallot Dressing

Folks, this dressing is like heaven and completely transforms a salad. And I’m going to go on the record as saying I would drink it!

Ingredients

1 small tomato, cored and chopped
1 small shallot, chopped
1 tablespoon plus two teaspoons sherry vinegar
2 teaspoons honey
1 teaspoon salt
½ teaspoon smoked paprika
½ teaspoon freshly ground pepper
½ cup extra-virgin olive oil
