Ingredients
1 large red bell pepper, seeds and stem removed and cut into short strips
1 – 2 tsp. olive oil (depending on your pan)
1 can (4 oz.) diced green chiles
2 green onions, thinly sliced
1/4 cup sour cream, whisked to soften
1/4 tsp. ground cumin
1 tsp. Spike Seasoning
fresh-ground black pepper to taste
6 eggs
1/2 – 3/4 cup grated Mexican Blend cheese
additional sour cream or salsa or thinly sliced green onions for serving, optional
