Strawberry Mochi with Red Bean

Serves: 6 large strawberry mochi bites

Strawberry mochi. Pillowy fresh mochi wrapped around slightly sweetened red bean paste and juicy strawberries. A Japanese dessert known as strawberry daifuku.

Ingredients

1/2 cup plus 1 tablespoon smooth red bean paste, “Anko” (150g) (I buy this pre-made at either the Japanese fish market or the Asian supermarket)
6 large strawberries, stems removed
3/4 cup sweet rice flour (100g)
100ml water
2 tablespoons sugar
Potato starch or corn starch, for rolling
