This summer panzanella salad with juicy nectarines and sweet cherry tomatoes makes a light yet filling vegan meal for the warmer days.
Ingredients
3 slices of slightly stale bread (use GF if needed) *
1 cup of cherry tomatoes
1 red onion
2 nectarines
2 tbsp of mixed sprouts
1 cup of fresh basil
4 cups of mixed greens
2 tbsp toasted pine nuts
For the dressing
2 tbsp balsamic vinegar
1 lemon, juice
2 cloves of garlic, minced
1,5 tbsp maple syrup
salt, pepper
