Serves: 3 cups

An easy, delicious way to incorporate a crunchy snack + green vegetables + vitamin B12 + healthy fats into your day. NO guilt. ALL good.

Ingredients

1 small zucchini, sliced into 1/3″ rounds
1 small carrot, sliced into 1/4″ rounds
1 small parsnip, sliced into 1/4″ rounds
1 small yellow onion, chopped into 1″ pieces
1/2 cup cashews, soaked overnight and drained
3 tbsp nutritional yeast
2 tsp Himalayan sea salt
2 tsp black pepper
