Green Rice Pilaf

Jasmine rice tossed with a bright lemon herb sauce and sauteed carrots, zucchini, and peas.
Ingredients
Rice:
1½ C water
½ a sweet onion
2 garlic cloves
1 tsp salt
crack of pepper
1 C jasmine rice
Green Sauce:
½ C water
½ a sweet onion
2 garlic cloves
¼ C parsley
¼ C basil
the juice of 1 lemon
a generous pinch of salt
crack of pepper
Vegetables:
2 T olive oil
2 carrots
1 large zucchini (or 2 small)
⅛ tsp chili flakes
Small sprinkle of garlic powder
salt and pepper to taste
1 C frozen peas, defrosted
