Grilled plums, goat cheese and maple syrup-sweetened nut clusters make for a hearty summer salad.
Ingredients
For the Maple-Nut Clusters:
1 cup sliced almonds
1/2 cup hazelnuts, roughly chopped
1/2 cup pepitas (you could also use shelled sunflower seeds)
3 tablespoons maple syrup
1/4 tsp. salt
For the Salad:
4 plums, halved and pitted
4 tablespoons extra-virgin olive oil, divided
2 tablespoons balsamic vinegar
1 tablespoon maple syrup
1/4 tsp. black pepper
8 cups mixed greens
4 ounces goat cheese, crumbled
