Cherry, Grilled Corn and Quinoa Salad with Arugula and Blue Cheese

A salad packed with summer favorites like cherries, corn and arugula. Perfect for a potluck or picnic.

Ingredients

1/2 cup quinoa
1 cup water
4 ears of corn, husks and silks removed
3 tablespoons apple cider vinegar
2 tablespoons extra-virgin olive oil
1 tablespoon maple syrup
1/2 tsp. salt
1/2 tsp. black pepper
3 cups arugula
1/4 cup fresh basil leaves, roughly torn
2 cups cherries, stemmed, pitted and halved
1/2 cup blue cheese crumbles
