Grilled Potato and Fig Salad with Maple-Almond Clusters

Serves: 4

A summer salad with grilled potatoes, grilled figs, arugula, goat cheese and maple syrup-sweetened almonds.

Ingredients

1 cup sliced almonds
3 tablespoons maple syrup, divided
1/4 tsp. salt, plus more for finishing the salad
1.5 lbs fingerling potatoes
16 fresh figs, cut in half lengthwise
3 tablespoons extra-virgin olive oil, divided
1/2 cup balsamic vinegar
6-8 cups arugula
4 ounces crumbled goat cheese
Black pepper
