3 large beets (6 small) with their greens
~2 tsp olive oil
8 oz (225 g) baby spinach
3 oranges
4 oz (113 g) mild or honey goat cheese / chevre
1/4 cup (35 g) pine nuts
~3 TBSP balsamic vinegar [or to taste]
