3 heaping cups beets, cut into 1⁄2-inch cubes
2 cups onion, finely chopped
1⁄2 cup potatoes, cut into 1⁄2-inch cubes
1 carrot, diced into 1⁄4-inch cubes
1 teaspoon whole caraway seeds
1 1⁄2 teaspoons sea salt
Ground pepper, to taste
4 cups shredded green cabbage
1/3 cup distilled white vinegar
1 tablespoon coconut oil
Chopped fresh dill, for serving
