Ingredients

1 lb eggplant
½ cup tightly-packed fresh mint
2-3 cloves garlic
zest of one lemon
2 cups cooked chickpeas
2 tbsp lemon juice
2 tbsp tahini
2 tsp smoked paprika
2 tsp cumin
¾ tsp sea salt
½ tsp pepper
