Spicy Harissa Bean Soup

Spicy harissa packs flavor into this simple, mixed bean soup.

Ingredients

2 1/4 cups mixed dried beans
1/4 cup extra virgin olive oil
2 tablespoons minced garlic
1 large onion, finely diced
2 medium carrots, finely diced
2 celery stalks, finely diced
1 red bell pepper, seeded and chopped
3 tablespoons harissa paste
1 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/8-1/4 teaspoon red pepper flakes
4 cups vegetable broth
1 28 ounce can diced tomatoes (BPA free)
Balsamic vinegar, for garnish
