A vegan Mixed Herb and Nut Pesto. Perfect when you want to change up your normal traditional basil pesto routine!
Ingredients
2 cloves garlic, peeled
1/3 cup mixed nuts and seeds (I used pistachios, walnuts and sunflower seeds)
2 cups fresh basil leaves, packed
4 tablespoons fresh parsley leaves
2 tablespoons fresh oregano leaves
1 tablespoon fresh thyme leaves
1/4 tsp. each salt and pepper
1/3-1/2 cup extra-virgin olive oil
