Ingredients
1 lb golden beets (medium sized), peeled and trimmed
2 tablespoons extra-virgin olive oil, divided
1 tsp. salt, divided
1 tsp. black pepper, divided
1 lb green beans
1/2 tablespoon red wine vinegar
1/4 cup sliced almonds
1-2 tablespoons fresh tarragon, roughly chopped
