Ingredients
600 g potatoes (Yukon Gold or Red Potatoes work well)
200 g tomatoes (regular or cherry)
½ avocado
4 medium-sized pickles
80 g corn kernels
100 g kidney beans
1 green onion
2 tbso finely chopped parsley
50 ml vegetable broth
2 tsp mustard
2 tbsp soy milk
1 tbsp balsamic or red wine vinegar
