A new way with root vegetables, all dressed up with saffron and orange.
Ingredients
Marinade:
¼ cup orange juice
2 tbsp extra-virgin olive oil
Pinch, saffron threads (heaping ¼ tsp)
2 tsp sea salt
½ tsp ground cumin
Ground pepper, to taste
Vegetables:
1.5 lbs (about 3) turnips, peeled, cut into ½-inch cubes
1.5 lbs (about 6) beets, cut into ½-inch cubes
.5 lbs (1 large) sweet potatoes, cut into ½-inch cubes
Pine nuts, to serve
